Italian sliced steak salad

Tagliata di Manzo, which means ‘sliced beef’, is less a recipe and more a classic Italian approach to serving steak. It’s all about the ingredients – featuring a quality cut like sirloin, seared, sliced and served over a bed of rocket. Shavings of Parmesan are scattered on top and the dish is finished with a drizzle of olive oil and balsamic vinegar. That’s it – simple, elegant and bursting with flavour.

 

To do it justice, start with a good cut of beef that’s not too lean. Sirloin, rump or ribeye will all work beautifully.

Italian sliced steak salad

Ingredients

  • 5–6 tbsp extra-virgin olive oil, plus extra for brushing the steak
  • 1 sprig of fresh rosemary, roughly chopped
  • 1kg sirloin steak, at least 1 inch thick
  • Sea salt and freshly ground black pepper, to taste
  • 180g wild rocket
  • 100g Parmesan cheese, shaved
  • 4–5 tbsp treacly balsamic vinegar

Recipe

  1. Pour the olive oil into a small bowl. Lightly crush the rosemary to help release its oils and add to the bowl. Leave to infuse for at least an hour – overnight is even better.
  2. Remove the steak from the fridge at least an hour before cooking to bring it to room temperature. Pat it dry with kitchen paper, then brush lightly with olive oil and season generously with salt.
  3. Warm a cast-iron or heavy-bottomed pan over a high heat until it’s almost smoking. Lower the heat slightly, then add the steak. Cook for about 2 minutes per side for rare, or 3 minutes for medium-rare.
  4. Transfer the steak to a board or plate and let it rest for 10 minutes to retain its juices.
  5. Arrange the rocket and Parmesan on a large platter or divide between four plates. Slice the steak into thin strips (about ¼ inch thick) and lay over the rocket. Season with a little more salt and pepper.
  6. Drizzle with the rosemary-infused olive oil and balsamic vinegar. Serve immediately.
